It's a party-sized premix that is packed full of essence of the holiday season, making it perfect for your festive gathering. Reserve the remaining cordial you can use for morning drinks, puddings, or to mix more rounds of bikinis.
Bikini
Makes enough for 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Cordial: Put all the ingredients into a pan, bring to a light boil, mixing so the sugar melts. After that, take off the burner and let it to cool down completely. Pour into a clean bottle, seal and refrigerate it in the fridge, it will last for about a month.
For the Batch Mix: Mix every liquids in a large bottle, let it rest for one hour, then pass it through best through cheesecloth, so it's perfectly clear.
For serving: Add 85ml from the premix into your stirring glass containing ice, and stir carefully for one minute until cold. Pour to a cold coupe glass or a similar vessel, top with a few cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
